Halal Guys Recipe | How To Make White Sauce & Red Sauce | NYC | 6IX | CWS

The Halal Guys, they were huge in New York
Street Food, before New York was really huge in the street food. There would be a line that would stretch literally
a hundred feet and there would be people just waiting for their Chicken & Rice or their
Lamb & Rice So Beat the Line and let's re-create The Halal
Guys style food at home. Let's begin with
the ingredients. So here I have 1 Tsp Salt, 1 Tsp Cumin Powder,
1/2 Tsp Black Pepper Powder & 1 Tbsp full Oregano & 1 Tbsp full Yogurt Then I have, 600 Grams, so a little bit more
than one pound, chicken breast. So we have two large chicken breasts just
slightly over one pound. Then I have Cooking Oil and let's begin with
the process. So we'll take the chicken breast and make
some deep cuts so that our marination can penetrate well so just roughly deep cuts, like that, and
then we can begin marinating Black pepper, oregano, yogurt, salt & cumin

1 Tbsp Oil. Ok so we have to mix this. Keep in mind, street food chicken isn't very
heavily marinated, this is light, very few ingredients however it is full of flavour. so, this is it. You have to marinate it for 15-20 minutes
and keep it aside. After marinating our chicken we can being
preparing the rice. I've added in 1/4 cup cooking oil, green cardamom
and a small piece of cinnamon stick. This is a half cup chopped onions. We just have to sauté this on medium-high
just slightly I've sautéed the onions for 2-3 minutes,
now I'm adding in the rice. These are soaked and washed rice (basmati). So after adding in the washed and soaked rice,
we have to lightly fry them for 1-2 minutes So after frying the rice, I've added in the
salt this is food colour, this gives it a really nice colour and this is chicken stock, some people call
it chicken broth. Some people add in Chicken Knorr Cubes instead,
you can do that as-well, or if you have homemade, you can use homemade stock If you notice your rice is not similar in
colour to what you'd find at the street food vendors, a dark orange colour, you can add
some more colour The rice have come to a boil, they're still
cooking, and theres some little liquid left.

So we're going to cook until only a little
liquid is left and then we'll cover and simmer. So basically, very low heat, we're going to
cover it and let it cook in the steam There's very little liquid left now, so we're
going to cover & simmer it on on low heat, for at least 20 minutes So while our rice is cooking, we're going
to start preparing the Red Spicy Sauce For that we will be using these long dried
chillies, we also have these round ones You can easily find these in Asian supermarkets,
so 1 cup altogether. And then I soaked them in 1 cup of hot water
for 30 minutes here I have 1 Tbsp White Vinegar and 2 Tbsp
freshly squeezed lemon juice and then we'll use 1 Tsp Garlic Salt & 1 Tsp
Onion Powder Garlic Salt, 1 Tsp. Onion Powder, 1 Tsp. At the same time we'll add in the freshly
squeezed lemon juice and white vinegar. So this sauce is now ready, however, don't
open the lid immediately, the spices can be harmful if inhaled especially through the
nose and throat so let this sit for at least for a few minutes,
then you can pour it into a bottle.

So now we'll make a really delicious white
sauce. 1/2 Cup, slightly more, Sour Cream, 1/2 Cup,
same as this, Mayonnaise, 1/2 Tsp Sugar, 1 Tsp Dried Parsley Flakes, 1/2 Tsp Black
Pepper Powder, 1/2 Tsp Salt & 1 Tbsp Fresh Lime Juice And another thing, please if you liked this
video then hit the Like, Share & Subscribe. So now we'll mix this really well. Mix, Mix….. and then we'll pour this into
a bottle, any serving bottle that you may have Here's my serving bottle, and we'll pour this
in using a strainer. Ok, here it is, ready. Here's how we'll serve it. So now we'll cook the chicken, I've added
in 2 Tbsp worth of cooking oil and now we'll add in the chicken breast, like this, Mmmm, this smells wonderful, already smelling
like shawarma so what I'm doing now is, I've turned up the
heat, and we're drying up out any excess water then we're going to place it on a cutting
board, cut it, put it back in the pan and then fry it so now I'm cutting them into squares, rather
rough pieces, chunks.

This will allow the edges to crisp up and
cook nicely. And the leftover juices in the pan will coat
and season the chicken really well This is the same pan from earlier, we'll put
the chicken back into the same pan. This is where you're going to get that professional
taste. There's a tip to it. When you're frying the chicken at this point,
add in a little, maybe 1 tbsp oil because while shawarma is typically cooking, they
include lamb fat with the chicken which they use in the restaurants which gives it a nice
taste and texture so you can use lamb fat if you have it, or
add in a little oil to crisp up the edges look at this, such beautiful, and pleasant
aroma so let's serve it.

First we'll make a base layer of rice Now we'll add in the chicken, some lettuce some diced tomatoes some pita cut into triangles The Star of the Food. This is the white sauce, you can use as much
as you desire. If you like lots, put more. And then, we'll top it with hot sauce. And now, we'll top it with the sauce. Our absolutely delicious chicken shawarma
on rice is now ready, it's so tasty. I really hope you do give this recipe a try with
